Peter Bro, the restauranteur behind Broder, Savoy Tavern, and Broder Nord, is getting into the downtown diner game: As first reported by Byron Beck, Bro will take over the space long home to the Red Coach Restaurant to open All-Way, a diner focused griddling In-N-Out style burgers. Bro — who has long been looking to open an outpost of Broder downtown — says he jumped on the Red Coach space when it became available, planning to keep its familiar booths and counter. "I always loved the Red Coach," he says, noting he'd stop in for one of its burgers every other month or so. "We're changing some surfaces, but mostly, we're really keeping it the same."
All-Way's menu pays tribute, in a way: Bro, who designed the burger at N. Mississippi's Bar Bar, will serve a menu of "mostly" In-N-Out-style burgers (with quarter-pound patties on housemade buns), plus traditional accompaniments like custards, milkshakes, and fries. According to Bro, a dinner menu will branch out to offer fried chicken, fish-fry platters, and possibly fried cheese curds (borrowed from Savoy's menu). Late-night, the bar will provide a respite for nearby restaurant industry workers, offering mixed drinks. "We're really going to focus on being a good neighborhood bar," Bro says, staying open until midnight or 1a.m.
The Red Coach shuttered in April 2014 after 55 years in business and the passing of its longtime general manager. All-Way is aiming for a mid-October opening.
