Chef Ken Norris is making the switch from seafood to sausage: The Oregonian reports that Norris, the onetime co-owner/chef of the now-defunct Riffle NW, plans to unleash a new sausage-focused concept, Clutch, by the end of the year. According to the O, Norris has already landed two locations: a kiosk at the Portland International Airport and a spot at the still-under-construction mall at Beaverton's Timberland Town Center.
A look at Clutch's social media presence suggests unique takes on the sausage sandwich, with test dishes like gyro- and smoked-lamb sausages (the latter dotted with crispy chickpeas, hummus, and feta), and pork linguisa sausage served on a bun with bacon jam, cheddar, and caramel corn. The PDX location of Clutch is aiming for an October opening, with the Beaverton spot following before year's end. More information as it becomes available.
