As previously reported by the Oregonian, the Japan-based Kukai Ramen & Izakaya will indeed open its first Oregon location inside Beaverton's still-under-construction Timberland Town Center — and according to a rep, its bowls will feature noodles by the cultishly beloved Sun Noodle, which famously tailors noodle recipes based on each restaurant's broth.
The 60-seat Beaverton restaurant will feature the same menu currently offered at Kukai's Seattle and Bellevue locations. Ramen is available in both pork and chicken broths, with three noodle varieties: The classic shio, shoyu, and miso broths are staples, while garlic tonkotsu and "yuzu shio" break slightly from the traditional mold. In addition to ramen, expect rice bowls and small plates like octopus dumplings, potato croquettes, and onigiri. Kukai Ramen joins chef Ken Norris's previously announced sausage concept, Clutch, in the Timberland Town Center. It's aiming for a February 2015 opening; more as it becomes available.
