After closing their breakfast-taco cart Pepper Box back in October 2013, proprietors Jim and Margaret Wilson have announced they'll open a brick-and-mortar cafe on SE Morrison Street. According to Jim Wilson, the 1,100-square-foot restaurant will take over the former Vivo Espresso space, transforming it into a 28-seat, counter service cafe.
The Wilsons will resurrect the original Pepper Box menu — breakfast tacos on homemade tortillas, quesadilla sandwiches, poblano-dotted mac and cheese — plus new items. Expect green chile cheeseburgers, tortas, "and an extended breakfast menu ranging from huevos rancheros to cornmeal pancakes," Wilson says. The Pepper Box Cafe is aiming for a late-August opening.
