Jason Barwikowski Returns, Riding on the Pop-Up Wagon

Chef Jason Barwikowski, formerly of The Woodsman Tavern, is back, this time trying his hand in the pop-up game. Barwikowski tells Eater he's joining forces with Kelley Roy of ADX and Portland Made, and Billy Tosheff of Stargazer Farms, for two recurring culinary series: a new weekly Friday lunch series and monthly farm overnight dinner and brunch event, called the Explorers Series.

ADX, a shared workspace for local makers, designers, and artists, will host the Lunch Wagon—a family-style lunch menu designed by Barwikowski with fresh produce from Stargazer Farms. The weekly meal, which pops up inside the ADX space, will be accompanied by a cast of rotating culinary and design experts involved in the many aspects of manufacturing. Roy says, "It's about bringing food, farm, and manufacturing together, which are all so closely connected."

The monthly dinner and brunch events, which Barwikowski calls "a rustic, camp experience," will be held at Stargazer Farms, where optional overnight lodging or free camping is available. A glimpse of Barwikowski's first vegetable-driven dinner menu includes grilled fennel and spigariello, potatoes with basil pesto, fresh tomatoes with olive oil and sea salt, and roasted pork shoulder with tomatillo. A farm tour precedes the meal, optional activities follow dinner service, and for those who choose to stay overnight, brunch is provided in the morning as well.

Barwikowski departed as head chef of The Woodsman Tavern about a year ago, moving on to spend a little more time with his family—he has a 19 month old and a three year old. His resume also includes stints at Clyde Common, Olympic Provisions, and most recently he picked up shifts at Bollywood on Division. What he says about working with Roy and Tosheff: "I'm thrilled to be immersed in this. I'm sitting in the tent I'll be cooking in and I'm looking out on the greenhouses and the fields. It's pretty exceptional." Barwikowski also hinted at other possible pop-ups and collaborations to come in the near future.
