After just two months, chef Daniel Mondok is out at the Paramount Hotel's Swank & Swine. The restaurant today confirmed that the itinerant chef is gone and sous chef Jaren Shafaieh has taken his place.
Before opening Swank & Swine, Mondok spent several months behind the stove at Food and Bloom catering, but he's better known for opening Sel Gris (which officially closed in 2010) and opening Paulee restaurant in Dundee: It opened in May 2012 but he left after six months. Shafaieh, the former executive chef of 23 Hoyt and a cook at Clarklewis, had collaborated with Mondok in creating Swank & Swine's seasonal Northwest menu. The restaurant says Shafaieh plans to continue building on that theme.
