The suburbs are getting into the vegan action with the recent opening of La Vida Veggie. The Oregonian reports the inexpensive café specializes in raw, vegan, vegetarian, and gluten-free dishes in the $10-and-under range, using Latin American or Mediterranean flavors and organic ingredients. Think walnut-meat tacos with guacamole, salsa, pickled cabbage and cashew cheese nestled in a collard green shell. Open for breakfast, lunch and dinner, the café's menu includes juices and smoothies, salads, and screaming $5 lunch deals for students, which include a sandwich, a salad, and a smoothie.
