Hilaire's Encore was located Downtown on SW Washington "sixty steps below Broadway." From the 1930s to the 1980s, it served up continental cuisine, where the Marriott hotel is now. According to the blog Stumptown Blogger, the Encore was added on to the original restaurant "to attract the higher end evening diners."
Reed Darmon says, "I know that the owner of Hilaires downtown once turned down an offer to go into business with Colonel Sanders, big mistake. "I vaguely remember that place, Mr. Hilaire in his white suit going from table to table, and beautiful wood-paneled walls."
