Ken Norris Now Serving Clutch Sausages Downtown at New Cart

Last week, a tipster let us know that for the last several weeks, Ken Norris' Clutch Sausagery had gone dark. The only real signs of life at the Timberland Town Center location was a static sign hung on the door that read "Gone fishing."

Now we know Norris is a hardcore fisherman, so this didn't seem too out of the ordinary, but had he shuttered his place?

"No," he told us earlier this week. In fact, he's been laying the groundwork for a new Clutch food cart, which opens today on SW Washington Street, between 9th and 10th avenues.

The cart will serve an abbreviated list from Norris' inventively stuffed sausage menu (the "bacon cheeseburger" is stuffed with French fries, the "hot smoked rib" is stuffed with slaw, barbecue sauce and pork rinds), with new creations rolling out once he feels he's gained the trust of downtowners.

"I'm just excited to feed people," he says, and a downtown cart gives him the critical mass he needs to do it.

Will the Timberland shop, which he's currently using as a production facility for catering, reopen?

If the demand is there, he says.
