Located at 1139 NW Couch St., the restaurant space formerly home to Chinese-ish P.F. Chang's is finally getting new life: Holstein's Shakes and Buns is moving into the 6400-square-foot space and hopes to open late-spring 2016. Holstein's Shakes and Buns opened its first location in Las Vegas in 2010, and it opened its second location in Costa Mesa in Orange County, CA this September. The info dropped by PR-rep Katie Camblin is promising: Holstein's is "excited to tap into the local beer market," with its Las Vegas and Costa Mesa locations serving around 200 and 400 brews respectively; it's a "casual and inviting" sit-down restaurant catering to all ages; and the Portland location will likely be "artwork focused." (Does that mean it will it bring its signature pink-neon cow?).
Food-wise, Holstein's serves contemporary burgers and shakes, and with Portland, it intends to offer expanded entrees and salads. Its signature burger is the Gold Standard, a dry-aged beef sirloin burger with smoked bacon, aged goat cheese, tomato confit, baby arugula, and garlic-chive aioli, and its boozy signature milkshake is the Campfire Smores, with Smirnoff Marshmallow Fluff Vodka, chocolate syrup, marshmallow, and graham crumble.
