Chefs Pepe Arancibia and Daniel Vargas are fellow musicians with experience cooking together in Chile, and they offer traditional South American dishes from the Andes region in vegetarian form. Think mushroom ceviche in a tropical leche de tigre (citrus-based marinade featuring mango) and tri-colored quinoa stuffed with veggies and served at room temperature with a beet-balsamic gel.
