Tonight's the night at Olympia Oyster Bar, the new casual oyster bar and seafood restaurant from chefs Melissa Mayer and Maylin Chavez located at 4214 N Mississippi. As the menu shows below, Olympia Oyster Bar will stay true to its name, sourcing the relatively rare Olympia oyster, and its "naked" oyster selection includes the Kataifi, served with a smoked avocado purée, pickled serrano jam, morimoto dust, and micro cilantro. While Ryan Magarian (Oven & Shaker) will indeed be behind the bar, the promised champagne cocktails have yet to appear, but you'll find classic cocktails and a wine list with bubbles and wines in the $7-9 range, including A to Z's Unoaked Oregon Chardonnay for $6.

Olympia Oyster Bar's goal of providing oysters for everyone in a casual setting officially kicks off at 5:30 p.m. today. After today, the restaurant and bar will be open from dinner from 4 p.m. to 11 p.m., Tuesday through Saturday, and for brunch from 10 a.m. to 3 p.m. Sunday. Mayer and Chavez tell Eater they aim to offer lunch, too, in early 2016.
