Back in December we brought word that Pine State Biscuits was working on a brand-new cocktail menu courtesy of Matt Mount, the former executive distiller at House Spirits who is now running Merit Badge, a craft cocktail catering company.

Well the spirited lineup is finally available at the NE Alberta and SE Division locations, and like Pine State's signature biscuit sandwiches, the nine new drinks have a Southern soul with a Northwest touch.
The Poor Man’s Hattan ingeniously dumps a personal-size bottle of Makers Mark bourbon into mason jar of Cheerwine soda, with a dash of bitters and a cherry for garnish.
In the Winter Julep, St. Elizabeth Allspice Dram warms up the minty Kentucky classic.
The White Zombie features Dickel White Corn Whiskey and locally made B.G. Reynolds' Don's Mix, plus fresh lime, old fashioned bitters and soda.
And the appropriately named John Daly is a boozy take on the Arnold Palmer, with housemade lemonade, locally made Raft Botanicals Winter Smoked Tea, and Monopolowa Vodka.
All cocktails are $7, and to go with all that boozy goodness, the two locations have streamlined their nighttime hours. Both stay open from 7 a.m. to 11 p.m. on Thursdays through Sundays, and offer happy hour on those days from 3 to 6 p.m. and 10 p.m. to closing, with $1 off cocktails and $2 off most biscuit sandwiches. Mondays-Wednesdays the locations shutter at 3 p.m.
