Ham Bar Gets a Name; Kukai Gets Closer to Opening

Hamlet: The Oven & Shaker trio has finally settled on a name — Hamlet — for their diminutive ham-focused cocktail bar, going into the former Jinx space in the Pearl. Chef Cathy Whims will curate half a dozen hams — European to Southern country — plus a wide list of accompaniments. Magarian's drink menu will focus on spirits and cocktails that complement the ham. Kukai Ramen & Izakaya: The build-out of the first Oregon outpost of the popular Japanese-based ramen franchise is nearing completion. Ron Yan, owner of the Beaverton location in the new Timberland Town Center, says "Kukai is in earnest construction and is shooting for serving within the next 6 to 8 weeks." The chain has only two other U.S. locations, both in Washington. The menu will be the same as the Bellevue and Seattle spots, featuring a variety of ramen bowls, rice bowls and small plates like octopus dumplings and onigiri.
