Watch Ox's Greg Denton and Josh Ozersky Cook a "Dirty" Steak

As Esquire magazine's restaurant editor, Josh Ozersky knows how to cover restaurants and chefs. But his true passion, and what he's really known for, is his love for and knowledge of meat in all its forms. It's the subject of his books, his Meatopia festival, and this video, in which he stops by Ox to film chef Greg Denton cooking a "dirty" steak.

Ozersky moved from New York to Portland last fall, and in addition to writing for national outlets, he's been making videos around town for The Manual.com, a lifestyle website for men. Not only did he film at Ox, he recently did a series on knife buying and sharpening at the relatively new Portland Knife House.

But first, check out that steak. A dirty steak is one that's cooked directly on the wood coals, no grill. Although you'd think it would turn out to be an ashy mess, it's anything but. Watch and learn — and drool.
