Silk Vietnamese Retaurant, the upscale spinoff of the Pho Van chainlet, closed near the end of March to remodel, rebrand and reopen on April 7 as Pho Van Fresh.
The prime Pearl District corner spot on NW Glisan is now a fast-casual version of the Pho Van outlets on SE 82 and Beaverton. The menu, posted above the counter, is a pared-down, greatest-hits lineup of salad rolls, banh mi, rice bowls and, of course, pho from the original location. Instead of table service, guests order at the counter, take a number and find a seat.
The decor has been given a casual makeunder, with high-counter seating along the window facing NW Glisan, and metal chairs replacing Silk's high-backed slip-covered seats. The bar is still next door, and it offers happy hour Monday-Saturday.
