We're kind of obsessed with Original Fare, a PBS video series that follows the intrepid Kelly Cox as she goes on food procurement adventures like boar hunting, salmon fishing, foraging, clamming, and grape harvesting with experts who help her get up close and personal with her food. For anyone who likes to peek behind the curtain and see a food's journey from field and stream to plate, it's fascinating.
The latest one features a pheasant hunting trip with Elias Cairo and Tyler Gaston of Olympia Provisions. After taking Cox on a tour of OP's meat-curing facility, they head out hunting, then return to OP and turn the meat into confit that will keep for months. Watch and learn (unless you're squeamish).
