Jackknife Bar's New Chef Gives Menu a Vegan-Friendly Overhaul

Chef Russell Van der Genugten spent time behind the stove at Blossoming Lotus.


Jackknife Bar at the Hotel Sentinel is a year old this month, and Eater's 2014 Stone-Cold Stunner award-winner has announced a new chef and a new menu.

Russell Van der Genugten joined the team as the new executive chef in March, and he recently unveiled his new menu, which features a long list of vegan-friendly dishes inspired by his stint at the iconic Blossoming Lotus vegan restaurant.

It's the first major menu change since the opening, and dishes include vegan "crab" cakes; a banh mi burger made with marinated grilled tofu and chile aioli; and six-piece housemade vegan nuggets. There's still plenty for carnivores, including chicken liver mousse with huckleberry gelee; seared tuna in a nori crepe; and the Jackknife Burger,  which Van der Genugten is planning to update in the next few weeks.
