Chef Troy MacLarty's original Bollywood Theater on NE Alberta has always been big on charm but short on seating, resulting customers having to endure long waits for his Northwest take on chaat. Though he made sure to add heaps more seats when he opened his second location on SE Division, the original spot was still often tough to get into.
In a few hours, we'll all find out if that has changed. The Northeast location closed in April to remodel and expand into the former wine bar next door, and the bigger better Bollywood reopens today just in time for lunch.
The remodel added 1,100 square feet to the restaurant, which was used to not only expand the dining room but also the kitchen. That means in addition to fewer waits, you can expect more seasonal specials and an increasing emphasis on local produce. And by taking over the space next door, MacLarty was able to add even more outdoor seating.
