Since June 6, Nomad.PDX's Ryan Fox and Ali Matteis have been quietly serving their particular brand of modern seasonal fare on the mezzanine at Shift Drinks, the West End's new post-workday bar. As of yesterday, Eater learns that they'll be continuing the pop-up concept in the bar's mezzanine on Friday and Saturday nights at least until the end of the year, with plans in place for Sunday night dinners come July.
Until now, Fox and Matteis have been serving their ten- to 15-course dinners to roughly 18 nightly guests themselves, chopping those single seating dinners into three 60- to 90-minute heats. With the imminent arrival of a new manager, he says, they'll be able to devote more focus to cooking and plating.
As for the food, Fox says that what he and Matteis make menu decisions based on what's fresh and available, from fruit and vegetables to proteins. "If you came to dinner one night, and then came again three weeks later, you're going to see a whole different menu," says Fox.
