Having already opened a third location this spring, the Kure juice bar expects to open its fourth location on SW 12th Avenue in September. The fourth installment should have already been pulling its fresh wheatgrass shots in Portland's West End. Kure originally announce plans to open by April, and owners Nate Higgins and Nick Armour say there's a good reason for their month-long delay.
Namely, a move away from juices, smoothies, and shots and toward a hot food menu.
Higgins and his team are still hashing out the menu, and he told Eater, "I don't want to divulge the specifics." But he did release some details to get mouths watering. Everything on the menu will be organic, vegan, and gluten-free, and the menu will include a selection of soups, rice bowls, and salads, as well as prepackaged grab-and-go selections, like green chili "mac and cheese" and sriracha sushi rolls made with chickpea "tuna."
To reflect this new evolution, Higgins says he and Armour plan to retro-fit Kure's other three storefronts over the next 18 months.
The new 1,100-foot shop, which seats 20-plus inside (and about 40 or so outside) could be open as early as the second week of September.
