In the first dinner of our Chef Meets Brewer series, Eater and Goose Island took over Holdfast for a six-course feast full of flavor. Goose Island Brewer Eric Ponce perfectly paired eight brews with custom creations from Holdfast's Chefs Joel Stocks and William Preisch. Guests were taken through a huge range of flavors including sturgeon with apricot, chanterelles and hefe beer blanc paired with 312 Urban Wheat Ale and sweetbreads with corn, tomatoes, black truffle, and Guajillo pepper paired with Matilda Belgian Pale Ale.
