Ever since August 2014, shellfish-obsessed San Diego transplants Maylin Chavez and Melissa Mayer have threatened to open an oyster-driven bar—bar, as in, place to drink, not just a place to order oysters—and it sounds as though that day will actually come: On November 1, Olympia Oyster Bar will take over the lease at 4214 N. Mississippi Ave., replacing Beer City Bottle Shop.
Today, Mayer told Eater by email, "We are anticipating an early December opening, just in time for the holidays." The menu centers on "raw, naked, dressed" oysters. In terms of the bar program, expect bubbles, cider, and local spirits as well as "oyster Sunday brunches and [hospitality] industry oyster nights."
Chavez is from Tijuana, and she has experience cooking at a resort in Baja and running her own catering business. Mayer hails from Wisconsin, and she opened a restaurant in San Diego and owns the Martini Media company. The duo met in San Diego.
