ChkChk replaces a Subway at 1305 NW 23rd Ave., and once it opens, you'll find counter service and a menu with a fried chicken sandwich, a fried chickpea sandwich, mac and cheese, a chicken chopped salad, waffle fries, and a soup of the season. Yep, that's it. With ChkChk, owners Aaron and Jessica Grimmer (The Picnic House, Barlow, High Noon) aim to "reclaim" the guilty pleasure fried chicken sandwich by making it healthier. Primarily, chef Casey Gipson says he'll do so through careful sourcing.
