The day has finally come: Celebrated downtown bakery Nuvrei Patisserie and Cafe has expanded with a second location, and it’s a brand-new concept, Pop Bagel. Nuvrei is owned by Francois Payard-trained baker and owner Marius Pop, and at Pop Bagel, he’ll serve his signature pretzel-style bagels, whether with schmears or as sandwiches.
“We couldn’t meet demand for our bagels with the small space at Nuvrei,” creative director Jessica Risdon tells Eater, so the original Nuvrei now focuses more on straight French pastries, from croissants to macarons. Pop Bagel serves six bagel sandwiches, and rounding out its menu are Nuvrei cookies, granola, drip Heart coffee, tea, sodas, and other drinks.
Since opening the doors , Risdon says the kimchi bagel sandwich has been the surprise seller, featuring Choi’s Kimchi cream cheese, roast beef, gochujang sauce, and napa cabbage. Other sandwiches come with veggies or lox.
Pop Bagel is located in the lobby of downtown’s iconic Big Pink office building, aka U.S. Bancorp Tower, and the cafe is so grab-and-go it doesn’t have seats. “We really want to help people get their orders quickly,” says Risdon. “Right now, we’re making sandwiches in three to five minutes.”
Pop Bagel operates Monday through Friday, from 7 a.m. to 3 p.m. (or when the bagels sell out, which has been closer to 2 p.m., according to Risdon). Word of Nuvrei’s expansion first broke all the way back in January 2015.
