OP Wurst, the fancy signature sausage and frank spot by Nate Tilden and other members of the Olympia Provisions team, will set up shop at 3384 SE Division St., PoMo reports. The venue was previously home to Andy Ricker’s Sen Yai, as well as Tilden’s Honky Tonk Taco, which shuttered after just three months in operation, in October.
OP Wurst debuted in Pine Street Market in May 2016 and opened a second micro location in Oregon City in the fall. Its third establishment will move into an expansive SE Division venue — the restaurant seats 50 indoors, 80 out on the patio — and will be the first full-service OP Wurst.
Tilden tells PoMo OP Wurst 3.0 will be a bar and a restaurant, and the team is working on some new sausages, including chicken sausage, beef frankfurters, and Bavarian weisswurst. The third OP Wurst hopes to open late January or early February.
