Opening at 2030 N Willis Blvd., Prince Coffee will soon bring stroopwafels and coffees using Coava and Roseline single origins and blends to North Portland's Kenton Neighborhood. "The goal is just to do the basic stuff really, really well," owner Katie Prinsen tells Eater.
What's a stroopwafel? It's a popular snack in the Netherlands involving two thin waffle-like wafers sandwiching caramel syrup. Sound like the perfect snack to dunk in coffee? Yes, yes it is— And Prince Coffee will be making them fresh daily.
Prince Coffee is located in Revive Upholstery & Design showroom, and Prinsen says the build out is nearly complete. Prince Coffee softly opens with limited hours this Saturday, April 2, and it will be open daily, from 7 a.m. to 2 p.m., until its grand opening, on April 9, when it will expand its hours to 7 a.m. to 4 p.m. daily. Show up for the grand opening and you can get a free stroopwafel if you're one of the first 200 people.
For the past five years, Prinsen worked at and managed one of the city's Barista locations, and she says the menu at Prince Coffee will be pretty simple, really. "We're using as much local stuff as possible with the exception of a couple items, like Boxed Water Is Better and Fever Tree Tonic," she says.
