The fine pork-ery Hamlet, opened in the Pearl District by the illustrious Cathy Whims (Nostrana, Over & Shaker) and bar star Ryan Magarian, welcomes Devon Chase as its new head chef, and working with Whims, she's expanding the Hamlet dinner and happy hour menus, with a focus on adding more non-meat dishes. Chase has experience helming the wood-fire ovens at Whims's Nostrana and Oven & Shaker, and she spent the last three years as sous chef at Smallwares.
Hamlet is best known for its fine ham platters, whether prosciutto or country ham, and to these, Chase adds house-made mozzarella and pimento cheese and two new dishes featuring Nostrana's in-house cured ham: the gougeres on happy hour and the Ham & Cheese sandwich (also featuring that house-made mozz).
Hamlet recently purchased a smoker, made out of a wine barrel, and Chase should roll out house-smoked seafood items in the next month or so. To pair with these new dishes, Magarian has revamped the cocktail menu, and this includes adding three new sherry cocktails. To show off its new plates, Hamlet has also added an hour to its happy hour: Hammy Hour now runs 4 to 7 p.m. daily.
