Muselet Restaurant & Wine Bar, the restaurant with a potent wine program serving chic modernist food in South Waterfront, celebrates its one-year anniversary this May, with a new executive chef soon to take over the burners: Alexander Sullivan-Parker, formerly Muselet sous chef. Sullivan-Parker has cooked in Boston's Clio, which recently shuttered after 20 years, and Puritan & Company, and he also worked a year at Castagna.
In the press release, the restaurant says Sullivan-Parker "gives classic dishes a modern update in preparation and presentation," which could be a fair description of what executive chef Greg Zanotti had been doing at Muselet. The restaurant's dishes have often played with texture, whether foie gras served with gingerbread wafers or a dessert encased in blackberry bubbles.
According to the press release, Zanotti will move on to an undisclosed project as of June 1. In Portland, Zanotti is best known for being Justin Woodward's right-hand man at Castagna, and he also worked at Jordan Kahn's influential restaurant, Red Medicine, in Beverly Hills.
