Chef Dolan Lane, most recently of Meriwether's in NW Portland, is now the executive chef of Red Star Tavern, the restaurant adjacent to Hotel Monaco Downtown. After a long and varied career, Lane has gone full circle and now works once again with the company where he started his culinary career.
"I'm really excited about my new opportunity as executive chef at Red Star Tavern," says Lane. "This restaurant has a strong legacy in Downtown Portland, both for its food and its cocktail program, and I have a great team to work with as I develop menu updates for this summer. Having started my culinary career with Kimpton at Tulio in Seattle, I feel very fortunate to now be a part of the family again."
Currently, the Red Star Tavern lunch and dinner menus feature dishes like Tombo Tuna with cucumber-avocado sauce, herbed potatoes, and a melon relish; Pea Pesto Toast; and IPA-Braised Brisket—with many new dishes to come. The happy hour bar snacks run $2 to 6, with signature and classic cocktails for $5 to 7.

Lane had previously worked with the Bruce Carey Restaurants before leaving for Meriwether's in 2014. During his lengthy stint at BCR (which started back in 2000), Lane led kitchens at Carey's east side spot clarklewis and, in January 2013, took over the kitchen as Bluehour's head chef.
Jason Gordon, general manager of Red Star Tavern, tells Eater, "I am excited for Chef Dolan to make his on imprint on our menu in the coming weeks. His cooking style is a bit lighter and brighter, and diners will start to see more of that in his dishes."
