Portland sandwich star Bunk Sandwiches appears poised to turn the classic grocery store deli counter on its head. As of February 1, Portland-based gourmet grocery Green Zebra sells grab-and-go Bunk creations at its Kenton and Lloyd stores, but most interestingly: Bunk will open a hot sandwich counter inside the Green Zebra’s forthcoming PSU location — set to debut February 14.
“We’ve been pushing Bunk to do grab and go for years,” Bunk owner Tommy Habetz tells Eater. “I, like many Portlanders, am on the go a lot, and there aren’t very many choices right now to grab something good, super quick.” Now’s the time to find out what that means in practice.
Grab-and-go options currently available at Green Zebra Kenton and Lloyd include chicken salad with bacon relish and Bunk’s local-meat-stuffed, New Orleans-style muffuletta. There’s also a new addition: roast pork with chimichurri, provolone, and Bunk’s snappy house-made peppers.
Bunk’s location inside Green Zebra Grocery PSU will deliver the hot sandwich options, in addition to grab-and-go. Most important is Bunk’s iconic pork belly Cubano. Other menu items include its meatball parmigiano hero, Italian cured meats, and bacon, egg, and cheese breakfast sandwich.
With the deli counters at other local gourmet grocers, like New Seasons, regularly wrapped in lines, the collaboration may be able to up the game. Welcome to chef-driven creations inside Portland’s already gangbusters gourmet groceries.
