Six months ago, iconic Portland chef Vitaly Paley and wife and business partner Kimberly Paley opened Headwaters inside The Heathman Hotel, replacing the historic Heathman Restaurant, and now in a twist, PoMo reports the upscale, seafood-driven spot has replaced the opening-day executive chef, Ken Norris. Norris is best known as the head chef and co-founder of now-shuttered Riffle NW, a venture he left in 2013. Before joining Headwaters, he operated the gourmet sausage food cart Clutch.
Eater has reached out to Headwaters for comment, and speaking to PoMo, the restaurant says the separation was amicable and will provide the opportunity to expand its seafood offerings. Chef Tim Eckard now stands in Norris’s place, and he brings experience as the chef de cuisine at The Jory at the Allison Inn and three years as executive sous chef at the Heathman Restaurant.
