It’s not often a restaurant opens with its own lexicon, but Baked Roots Bar didn’t begin serving vegan, oil-free loaded fries this week to fit in. According to PoMo, Baked Roots Bar was established by three recent college graduates, Elvira Raposo, Sade Perez, and Michael Partridge, and the restaurant offers a seven-dish, all-vegan menu centered on six loaded-fries options. And the other item on the menu? That’d be "Glaciology," or "chocolate, peanut-butter icebergs submerged in gloriously fizzing root beer," aka what is probably a root beer float.
Each of the loaded fries is inspired by the owner’s backgrounds, global travels, and the Earth’s continents. Partridge comes from a Greek family and Raposo and Perez have Dominican Republican heritages. The Libertadores fries, which feature yuca root, show a pretty clear connection with the Dominican Republic, whereas the Holism fries are a nod toward Asia: Japanese sweet potato fries topped with "dim-sum slaw, oven-crisped ramen noodles," and house-made nori "jerky."
Located at 970 SE Madison, Baked Roots Bar is now open daily to serve its seven-dish, all-vegan and all-oil-free menu. It operates Monday through Thursday, from from 11 a.m. to 7 p.m.; Friday and Saturday, from 11 a.m. to 9 p.m.; and Sunday, from 11 a.m. to 4 p.m.
