Peer Inside Short Round, Opening on July 17

Get ready for balut, fried ribs, chojang oyster shooters and five spice crispy pork belly

Are you ready for Vietnamese street food and drinking snacks? Ben Bui is betting on it.

The Fish Sauce owner’s newest restaurant, Short Round, will open at 3962 SE Hawthorne Blvd. on Monday, July 17.

As Eater reported last year, Bui says, “We’re going to be serving a lot of things that you can’t find at normal restaurants.” That includes dishes like stuffed bitter melons, brined pig intestines, snails, and baluts, as well as fried ribs, chojang oyster shooters, five spice crispy pork belly, a handful of Korean drinking snacks.

With 65 seats, the industrially chic space will have some pros in the kitchen: Bui’s mother, Lauren Huynh, will help it, and she’ll get a hand from Bui’s mother-in-law, Jinnie Song.

As for drinks, Bui says to expect draft beer, tap wines and cocktails, regular cocktails, and a pair of frozen slushy cocktails.

Bui says those cocktails have been designed by Fish Sauce bar manager KJ DeBoer, with an assist from La Moule’s Tommy Klus .
