After last Thursday’s devastating fire, a Big’s Chicken is back in the form of a summertime parking lot pop-up at Laurelhurst Market, and according to the O, it starts smoking birds today, July 19, at 11 a.m. Laurelhurst Market’s parking lot is actually the very place chef Ben Bettinger launched the concept, replete with a 14-foot smoker, as reported by Eater in 2016.
The pop-up menu will be limited. Big’s Chicken will offer its smoked chicken in sandwich form, as well as quarter-chickens. Those Jo-Jos won’t be available, but there will be other sides, like grilled corn and potato salad.
Speaking with Eater last week, Big’s Chicken co-owner Ben Dyer said he expects the pop-up to continue through the summer. Its hours are 11 a.m. to 4 p.m., daily, at 3155 E Burnside St.
And when Big’s Chicken does fully reopen, it will likely leave the fire-damaged space behind for a new venue.
