Peter Rudolph, Michelin-starred chef who helped open Hey Jack in Camas, is no longer the chef at his restaurant. According to owner Don Riedthaler, Rudolph is still involved in the business as a partner, but the restaurant has shifted into more casual territory, serving breakfast, lunch, and dinner, including prime rib Sunday dinners.
The new chef, Kyle Griffith, has worked in the Portland culinary world for decades, with experience at restaurants like the late, great Caprial’s and downtown fixture Dan and Louis Oyster Bar. “What’s great about Kyle is that he brings 20 years of Portland, Oregon background,” Riedthaler says. “He has enough of a pedigree to do what we do here, but he also has a good pulse on what people want in the Pacific Northwest.”
Riedthaler says the restaurant started to shift based on feedback from the locals. Customers were asking for breakfast and lunch options, as well as Sunday night dinners outside of the town’s few brewpub options. The restaurant launched a prime rib dinner on Sundays, as well as breakfast and lunch options complete with dutch babies and eggs Benedict.
“We’ve taken what we originally did and changed our focus,” the owner says. “This isn’t a white tablecloth, fine dining situation, where you gawk at your food and take pictures of it. We want to be a local, neighborhood restaurant... We can’t all be Coquine; we can’t all be Canard.”
It’s unclear what Rudolph is up to these days; his social media has gone silent. For now, the restaurant is open at 10 a.m. Wednesdays through Sundays.
