After Ohio-transplant Fat Head’s Brewery announced its impending Oregon closure in December, local owner Tom Cook decided to start his own brewery from the ground up. Von Ebert Brewing, Cook’s new brewpub with The Commons alum Sean Burke, announced its opening date in a press release.
Von Ebert will open in the Pearl at 11:30 a.m. March 26, with a killer food menu and a new set of beers.
Burke and Fat Head’s former head brewer Eric Van Tassel will handle the new taps at Von Ebert. Burke left The Commons four months before it closed in November, but his brewery won multiple Great American Beer Festival medals while he was in charge. Cook says the brewery will have around 100 beers released throughout the year.
The brewery can have around 40 beers on tap, but Cook says Von Ebert will open with around 30. Expect to see plenty of IPAs, a kolsch Cook is “jazzed about,” and around five separate barrel-aged beers.
Ebert snagged Burke after he left The Commons, and the two agreed to let him play over at the second brewery in the former Ringside space near Gresham. Burke wants to produce more Bretts, sours, and interesting barrel-ages at the second brewery, but for now he’s focusing on the Pearl location’s beers.
The Pearl brewery’s restaurant will pair its beers with pizzas on house-made dough, smoked meat sandwiches, and loaded burgers with toppings like fried eggs, pork belly, and kimchi.
