Welcome back to reality, Portland. After Memorial Day Wine Weekend, rosé season has begun, and the wine bar wave continues to crest with the announcement of Bar Norman. Meanwhile, cocktails are still making a splash on the Portland restaurant scene: Portland Mercury has new details on a ‘70s-themed cocktail bar, and shaker hotshot Colin Carroll is leaving his spot behind the bar at Trifecta Tavern. Let’s get into it:

THE BAR IS YOUR OYSTER — Nationally renowned Trifecta Tavern bar manager Colin Carroll is packing away the shaker, to be replaced by Trifecta vet Eddie Riddell. It sounds like the bar is heading in an “oyster-friendly” direction, which apparently means a vesper, champagne cocktail, and French 75 will hit the revamped menu. FREE LOVEHey Love, the new hippie superbar with alums of Dig a Pony, Bar Bar, and Rum Club, should open this summer, the Mercury reports. It’s apparently looping in a breakfast and lunch cafe called Superette. The story also hinted at some early cocktail ideas, including guava-macadamia Mai Tais and tamarind-ginger sarsaparillas. CATERED AFFAIR — Speaking of Chefstable, the restaurant group’s catering team just got a new captain. Los Angeles chef Doug Miriello recently relocated, leaving the hip Gjelina restaurant group (MTN, Gjusta).
