Portland custom salad chain Garden Bar is expanding to Lake Oswego and Beaverton, the latest in Portland’s wave of suburban expansions. The build-your-own salad bar opened a location in Progress Ridge shopping mall according to a Facebook post, with plans to open in Lake Oswego in June. In the same realm as a Sweetgreen, Garden Bar lets guests design made-to-order bowls or choose from seasonal or classic salads like the Banh Mi, with napa cabbage, roasted herbed chicken, and a “banh mi” dressing. In true Portland fashion, Garden Bar loads bowls with vegan, gluten-free, and/or dairy-free salads, from a traditional tuna nicoise to the vegan and gluten-free “bliss detox.”

Garden Bar Lake Oswego is joining the handful of Portland restaurants and chefs heading south, including pizzaiolo Nick Ford of Pizzeria sul Lago, Salt & Straw, and the soon-to-open Bamboo Sushi. That location will open at 345 1st Street, while the Beaverton location is now open at 15035 SW Barrows Road, Suite D135. The chain currently has seven other locations in Portland proper, with plans to open a 10th later this summer.
