It’s time to get nostalgic: The local charcuterie experts at Olympia Provisions are teaming up with Tillamook for a new grilled cheese cart in Pioneer Courthouse Square. The Melty & Meaty Sandwich Eatery uses Oregon meats and cheeses (duh), including OP’s mortadella, sweetheart ham, and capicola, which can be grilled with Tillamook cheddars, Swiss, provolone, or pepper jack.
The cart serves six designed sandwiches, ranging from a classic grilled cheese with three varieties of cheddar on sourdough to a white cheddar and ham with a swipe of seasonal fruit mostarda. For the pickier cheese enthusiast, build-your-own sandwiches are also available: First, start with a choice of bread — ciabatta, hoagie, sourdough, etc. — before landing on up to two cheeses, with options like smoked black pepper white cheddar. Add a few meats, say, bacon or pork pistachio pate, maybe a few spreads like Olympia Provisions’ famous pickles or sauerkraut, and boom — sandwich. Of course, a grilled cheese isn’t complete without a cup of tomato soup — add a cup of tomato-fennel for $4. The cart will be open from 11 a.m. to 4 p.m. daily at 701 SW 6th Avenue.
