Blue Star Donuts is leveling up. The Oregonian broke the news that the doughnut darlings are ditching their downtown digs for a larger fried dough emporium. The 5,000 square foot pastry shop will house the brand’s entire production facility, headquarters, and a doughnut counter complete with taps of Steven Smith iced tea and Coava cold brew. The flagship will also host late-night doughnut parties; the team has murmured about doughnut and champagne pairings. When it comes to the doughnuts themselves, CEO Katie Poppe told the O that the doughnut list will continue to grow, including more fritters, a permanent home for the fried chicken doughnut, and more free samples of experimental items from head pastry chef Stephanie Thornton. The new location will take over a corner of the 12th and Morrison building.
Founded in 2012, Blue Star Donuts currently has seven locations in Portland, including one in the airport, and another two in Southern California. The brioche-based doughnuts come in flavors like passionfruit cocoa nibs, blueberry bourbon basil, and Cointreau creme brulee.
