Poofy dessert company Puffle Waffle is moving into the space next to Hat Yai’s soon-to-open SE location, the Oregonian first reported. The Happy Valley chain of cheerful carts takes eggy waffles with spherical pockets (bubbles), rolls them into a crepe-like shape, and fills them with things like Nutella or ice cream. Puffle’s waffles come in plain, green tea, and chocolate with a variety of optional fillings or ice creams. Add one scoop of ice cream for $1.50, with flavors like coconut cream and huckleberry cheesecake, or toppings like rainbow mochi or pineapple for 50 cents each.
The company posted on Facebook announcing its plans to open on SE Belmont, which is also the home of the Earl Ninsom’s second Thai fried chicken restaurant. “We are just a few short weeks away from opening up our newest location!” the post reads. “Who’s excited?” The Oregonian reports that the cart should be open “as soon as next week.”
