Cherished breakfast pop-up HunnyMilk will begin serving fortune cookie waffles with vanilla bean mascarpone mousse, crispy pork ribs with cheesy garlic grits, and bacon dutch babies at its West Burnside restaurant this Wednesday, September 19. The established weekend La Buca pop-up decided to cross the river earlier this year, taking over the Bitter End location for a permanent breakfast restaurant. Booze hounds will want to wait a week: HunnyMilk is still waiting on its liquor license, which should be in place and ready by September 26.
HunnyMilk uses a prix fixe model for its breakfast service: Guests arrive and choose a drink, savory, and sweet plate for a flat rate of $22, with an additional $4 service fee in lieu of tip. From there, guests can add boozy beverages or sides like jalapeno hush puppy doughnuts for an additional fee. “Other people tell us that we’re solving a problem, the ever-present brunch dilemma of having to choose,” says owner Brandon Weeks. “You don’t have to think before you have your coffee.” For those just looking for a small bite, the new restaurant will also have an a la carte breakfast bar opening in a few weeks, with $3 or $4 small plates as well as cocktails.
Our New Brick and Mortar Brunch Spot! And just like that, we’ve got a new brick and mortar space! 1981 W Burnside St. Soft open (no liquor license yet) is September 19, 20 and 21st from 8am-2pm. Then we roll into a 5 day schedule every Wednesday thru Sunday with all the booze beginning Wednesday sept 26th, 8-2. Our original weekend pop up will continue running indefinitely every sat/sun from 9-2. Come see us at our new space next week and forevermore until the end of time!

Weeks revealed a peek inside the interior on social media. In the bar space, the restaurant has cheery aquamarine accents and cushy couches. In the restaurant area, small wooden picnic-style tables and four tops are sprinkled around a wrapped chef’s counter. The design reflects Weeks’ intention to use the adjoining bar as a waiting room for diners. Take a look at the menu below:
