Farmers market mainstay Twisted Croissant is opening a bakery in Northeast Portland. Instagram account @jcplayswithfood broke the news, saying the bakery should open in November with the company’s signature croissant muffins. Twisted Croissant fills and tops its croissants with things like ganache, seasonal fruit, and mascarpone-lemon glaze, using some house-milled flours for a variety of croissant bases. “We’re not necessarily going to be Salt & Straw,” owner Kurt Goddard says. “We want to master technique.”
They might not have a bone marrow croissant on the menu, but Twisted Croissant is far from traditional — the bakery will serve everything from s’more cruffins to croissant doughnuts, that latter being a new introduction to the pop-up bakery’s lineup. To wash down those croissants, the bakery will serve drip coffee and cold brew, moving into a larger espresso program as the cafe gets started. The bakery will be located between NE 21st and 22nd on Broadway, next to Zeller Chapel of the Roses.
