Cornmeal-fried catfish, buckets of hot chicken, and grilled pimento cheese sandwiches are coming to the soon-to-open fried chicken counter Yonder, according to the hot-off-the-press menus from Eater Young Gun and Southern culinary maven Maya Lovelace. The menu is centered around her famous fried chicken, with a few vegetable-heavy sides that have become showstoppers at her pop-up Mae.
As promised, the restaurant’s fried chicken comes in three optional preparations: Dusted in a spice mix, dipped in a North-Carolina-style vinegar sauce, or fried in a spiced lard. Dine-in fried chicken comes with an option of angel biscuit or stoneground savory cornbread, and to-go fried chicken is available in buckets.
As for the sides, some of Mae’s favorites appear on the Yonder menu, including bacon-braised collard greens finished with bourbon-barrel-aged hot sauce, pimento macaroni and cheese, and bread-and-butter zucchini pickles. Those familiar will also spot her iceberg salad with pickled-ramp-buttermilk-vinaigrette, which can also arrive with a fried boneless thigh; that same boneless thigh is the foundation of her Intimidator chicken sandwich, which comes smothered in bacon jam, pimento cheese, zucchini pickles, and iceberg. Also on the sandwich menu: two pimento grilled cheeses.
After some permit-related delays, the popular pop-up chef and her incoming restaurant are approaching the finish line, though Lovelace isn’t committing to a guaranteed opening date just yet.
