Las Vegas high-end chocolate shop Jinju Chocolates is opening a patisserie on N Williams. Chocolatier Jin Caldwell, who spent years in pastry and sweets at the Bellagio and Wynn-Las Vegas, will open a pastry and lunch counter within the Silica building in late February or March, with high-end croissants, handmade chocolates, and grab-and-go lunches.
Caldwell, a Master Chocolatier and award-winning pastry chef, plans to serve breakfast pastries, desserts, and candy from her new shop, with coffee from local Nossa Familia Roasters. A friend with a farm in Oregon City will provide herbs for lavender cheesecakes and pesto-and-sundried-tomato brioche. Panini, five-grain bowls, and salads will be available for the lunch crowd, with heart-shaped chocolates to take home for later.
Caldwell opened the Las Vegas Jinju in 2011, but Caldwell plans to move her operations to Portland in the long run. “I have really great clients in Las Vegas, but I want to find the happiness I’m looking for, more balance in my life,” Caldwell says. “That’s how I found Portland.”
