Downtown steakhouse El Gaucho is crossing the Columbia. The Benson Hotel restaurant will grab a riverfront spot within Vancouver’s Hotel Indigo, part of the massive Waterfront Vancouver development. El Gaucho currently has locations in Seattle, Bellevue, Tacoma, and Portland, serving old-school, Pacific Northwestern steakhouse essentials like Dungeness crab cakes, Northwest oysters, and, of course, several cuts of 28-day dry-aged beef. The restaurant won’t open until 2020, but according to a press release, the restaurant should have “El Gaucho classics” like tableside Caesar salads and Chateaubriand for two.
El Gaucho is the latest addition to the laundry list of businesses opening at The Waterfront, including new locations for Lake Oswego’s Pizzeria Sul Lago and Washington’s Maryhill Winery. Once it’s complete, the development will include six restaurants, five retail shops (including the Maryhill tasting room), the hotel, and a large pier and esplanade.
