Health-conscious diners, get ready: Eater Portland 2017 Chef of the Year Gabriel Pascuzzi opens his new restaurant dedicated grill-roasted vegetables and chicken to Slabtown today. Counter service chicken spot Mama Bird will specialize in smoked and grilled birds, with seasonal sides and kid-friendly desserts.
This spring, Food & Wine broke the news that the Stacked Sandwich Shop owner plans to expand across the Willamette, serving quarter, half, and whole Mary’s free-range chickens with a number of optional sauces like smoked garlic miso and wood-fired romesco.
A first look published in the Oregonian provides more details: The chickens are brined in pineapple juice and air-dried before they hit the grill, then portioned out in quarter ($9), half ($16), and whole ($29) servings. From there, diners can choose from salads like a red romaine and chicory Caesar, grilled produce like oyster mushrooms or stone fruit, and other odds-and-ends from the chicken: Mama Bird will sell chicken sausages, chicken liver mousse on grilled bread, and creamy Ayers Creek polenta made with the chicken’s stock. Desserts lean into child-like territory, with roast-your-own s’mores and root beer floats.
The space itself leans on natural wood, neutral tones, and plant life, with high ceilings and banks of large windows. An open-format kitchen surrounds the large grill, where chickens cook over hunks of wood. Mama Bird will open September 26 in the Carson South building, at 2145 NW Raleigh Street.
