There’s a new spot for apricot-honey scones and breakfast sandwiches in Inner Southeast. Rushmore Baking has been selling its baked goods to cafes around town for a little over a year, but as of a few weeks ago the bakery on SE Madison quietly opened its doors to the public. Now, visitors can swing into the small grab-and-go for coffee, croissants, muffins, breakfast sandwiches, and a breakfast pocket with breakfast sausage, smoked cheddar, and egg wrapped in croissant dough.
Originally, the team behind the bakery planned to only sell wholesale, but recently they decided to change it up a bit, pastry chef and co-owner Kristen Napoleoni says. “We’re on Madison right over the Hawthorne bridge; we saw traffic and figured it would be a great thing for commuters, so we just did it. Before then, the only feedback we got was from baristas and cafe managers—it was great feedback, but we wanted an opportunity to sell face-to-face.” The only advertising was a single Instagram post and an A-frame in front.
For now, the shop is open from 8 a.m. until 3 p.m. or sold out, Monday through Friday at 950 SE Madison Street. The bakers are also working on a croissant made with vegan “butter.” “The croissants aren’t perfect yet but they’re tasting really good and it’s freaking me out,” says Napoleoni. “I didn’t want to like a vegan croissant, but it tastes really good.” Guests will likely see those in a few weeks.
