Welcome to CascadiaWire, a weekly collection of restaurant news from up-and-down the Pacific Northwest corridor.

TACOMA — Rhein Haus is at it again. Capitol Hill's busy bier hall (formerly known as Von Trapp's) announced last year that it was setting up a second outpost in Denver, and now comes word that a third will root in Tacoma next year. Executive chef Pete Fjosne will remain at the helm and the cuisine will be familiar (housemade sausages, pretzels, etc.), but the Tacoma branch hopes to add its own brewery. In addition to Rhein Haus' own brews, it would serve other local beers and Bavarian ones, both bottled and on draft.

CAPITOL HILL — The team behind Belltown's Rocco's has quietly set up shop with a new project on Capitol Hill: Herb & Bitter Public House. Owner Jesus Escobar will focus on Spanish-style plates and amaro-filled cocktails at 516 Broadway E (formerly a Than Brothers pho shop).

PIONEER SQUARE — In December, Eater reported that a new Indian outfit, Nirmal's, was in the cards for Pioneer Square, and now comes news that owners Gita and Oliver Bangera hope to open by the end of this month. The new restaurant in the old Soup Daddy Soups space (106 Occidental Ave. S.) will feature the cuisine of its namesake Mumbai chef Nirmal Monteiro, who has been cooking all over the world for three decades, from prominent hotels in Bombay, to Disney in Japan, to Iraq during the war (where Monteiro set up the main kitchen for US Armed Forces).

Thanks to landlord issues, Zoe and Levi Hackett won't be opening their Baja-inspired Mexican joint any time soon.

Although Ballena just landed on The Oregonian's Diner 2015 round-up of restaurants they can't wait to try, they're going to have to wait quite a bit longer.

The Baja-inspired Mexican joint that former Cocotte chef Zoe Hackett and her husband, bar manager Levi Hackett, planned to open this summer at 7901 NE Glisan hit a major snag over the spring. When we checked in with them in late May, Zoe explained their build-out uncovered a host of major building repair issues that the landlord refused to fix, so they were forced to abandon their plans and regroup.

"We are not going to be able to operate our concept in that location," she wrote via an email on May 21. She said they are recovering from the financial loss before attempting to pursue opening Ballena in a new location.

Zoe is currently training as a bakery manager at Sweedeedee and continues to offer catering through her company Coco Catering, while Levi is creating an as-yet-unnamed line of wooden bar and kitchen products. "He is still experimenting with his different product ideas and types of wood to focus on," she says. "It's just a passion of his that developed while working in good bars and restaurants. We have been collecting wares for years so we are playing around with the idea of curating an online storefront."

Latin American-style chicken slow roasted over white oak.

This week, Dustin Knox of Perierra Creperie (and the shuttered Old Town bar Central), along with partner Todd Radcliffe opened a new food cart in the Cartopia cart pod, adding another option to Portland's burgeoning Latin American-style grilled-chicken craze.

Called Chicken and Guns, the cart focuses on locally raised chickens from Scratch Farms in Canby, grilled over white oak and served by the quarter, half or whole bird. On the side there are crispy potatoes doused in spicy Peruvian aji sauce, or a grain and vegetable salad topped with chimichurri sauce. For those who don't eat chicken, you can opt for a farm egg or just the salad and potatoes.

The inspiration, says Radcliffe via email, comes from frequent trips south of the border. "Dustin and I have both taken bike/surf trips down to Mexico, Central America, and the Caribbean. In all of these places you would find people on roadsides cooking chickens on makeshift wood-fired grills, so we wanted to create a cart where we could capture the smoke and fire and flavors we enjoyed on these expeditions."

To recreate that make-shift look, they built the cart using wood salvaged from a 200-year-old barn and added an old corrugated metal overhang. Hours are still in flux as they get staff hired and trained, but Radcliffe says they're aiming for Tuesdays through Sundays, with late night hours on the weekends. Sunday night is movie night at Cartopia, after all.

All from scratch, and all under $10.

Le Pigeon is taking a summer break the week of June 13 through 19, and while chef Gabe Rucker's away, he's handing over the keys to the kingdom to two cooks and a bartender from the Le Pigeon/Little Bird flock.

On Thursday June 18 from 6 p.m. to midnight, Le Pigeon pastry assistant Jaclyn Nakashima, Little Bird sous chef Andrew Gordon, and former Little Bird bartender Tom Lindstedt are putting on a casual, locally sourced, comfort-food pop-up at the East Burnside restaurant.
Some of the best things in life can be free, sometimes.

FREE PIZZA — The first Oregon outpost of the Southern California-based Blaze Fast Fire'd Pizza chain opens in Cedar Hills Crossing today, June 11. And to kick things off with a bang, they're giving away free pizza all day tomorrow, June 12. From 11 a.m. to 10 p.m. you can stop by and build your own 11-inch thin-crust pizza (a la MOD Pizza and Pieology). The only caveat is you have to follow Blaze Pizza on Instagram, Twitter, or Facebook to get it. (Blaze Pizza: 3260 SW Cedar Hills Boulevard)

FREE CHIPOTLE — Help clean up the Willamette River's three downtown beaches on June 27 and you'll be rewarded with an after party at Portland Sports Bar and Grill plus a gift card for a free Chipotle burrito. The first annual Portland Beach Bash and Cleanup is open to all ages. Work includes weeding, trash pickup and "unrocking" the beach. For more information and to register, visit SOLVE Oregon.

FREE COFFEE — Five years ago, Christine Herman-Russell and her husband, Wes Russell, opened Case Study Coffee on NE Sandy. Since then, they added two more cafes to their lineup and developed a strong contingent of loyal fans. So to celebrate their five-year anniversary and say thank you to their community of customers, they're giving away free cappuccinos on Sunday, June 14. Stop by any of the three cafes during business hours to get one.

FREE BREAKFAST — Take dad out for Father's Day brunch at Punch Bowl Social on June 21, and he just might win a free breakfast or burger. Each dad can take a shot at bowling a strike or hitting a bullseye. If he makes it, his Bacon Monkey French Toast or Bacon Burger is free.

Instead of taking over the former Sok Sab Bai space off SE Clinton, she has taken over the former Tributes pizza and subs spot on West Burnside.

Edelstein plans to open The Feisty Lamb in July, "albeit the exact day is still fluxing."

But there was one way in which the restaurant wasn't keeping up with the city's appetites — its brunch was only available on weekends. In this day and age and city, weekend-only brunch is downright old-school.
